Guacamole with Shallots and Padrón Peppers

2 Medium Tomatoes
3 Ripe Avocadoes
2-3 Garlic Cloves
1-2 Padrón (or Jalapeno) Peppers
1 Shallot or 1 Small Onion
1 Lime/Lemon
2 Tbs Chopped, 1/4 Bunch Cilantro
Salt and Pepper to Taste
1/2 Tsp Cayenne Pepper

Guacamole is the perfect summer food, with all of the yummy ingredients in abundance it's begging to be made!

We here at Coke Farm enjoy using Hass Avocados, and Heirloom Tomatoes, as well as Shallots, Padrón Peppers and Meyer Lemons for our guacamole variation (but work with what you have on hand!)

To start, peel and remove the pit from the Avocadoes and place flesh into medium sized bowl. Smash the avocado with a fork until it is slightly creamy with some chunks of avocado still intact.

Chop tomatoes, pepper and shallot/onion into small cubes; finely chop garlic and cilantro.

Add the garlic, tomatoes, peppers and shallots/onion to the avocado. Squeeze the lemon/lime, and add cayenne pepper into the mix and stir. Add cilantro and mix slightly. Add salt and pepper to taste.

Serve with your favorite tortilla chips and enjoy!
