Goat Cheese, Grilled Chicken & Yellow Wax Pepper Sandwich

8 Yellow Wax Peppers
4 Chicken Breasts
4 Ciabatta Rolls
5 oz. Goat Cheese
Pesto Aioli (optional)
Juice of 1 Lemon
Olive Oil
Salt & Pepper to Taste
1 Bunch Thyme
1 Head Frisee (or lettuce)

Marinate Chicken in Lemon Juice Olive Oil, chopped Thyme, Salt, and Pepper for (at least) 30 minutes.

Prep your grill (or pan).

Clean, remove stem, and cut a slit into the pepper; remove any seeds, and open inside out, to optimize grilling. Brush with Olive Oil, sprinkle with salt.

Place Chicken Breast on the Grill for 10-15 minutes a side. After turning the chicken, place peppers on grill. Allow to cook for about 5 minutes, watch for blistering.

While the chicken and peppers cook, wash and prep Frisee (or lettuce), toast Caibatta Rolls, then smear with Goat Cheese and Pesto Aioli. Place hot peppers and chicken directly on ciabatta, add frisee. Serve quick and hot!
